Where do I change the colour scheme, like menu bar etc.?
I remember doing it when I first played around with the temp[late but now con't recall how I did it.

It can be changed by editing css files. You can easy determinate the file which should be changed and the css class by installing and using DevTools or Fireblug plugin:
