1. You can do it by overriding Joomla constants, for more info please see the following article: http://blog.astemplates.com/joomla-language-override/
In your case you need 'MOD_ARTICLES_ASNEWS_READMORE' constant.
2. Sorry, the module does not have such option, you can do it by creating your custom HTML only.
