Our suggestion is to install it using quick-start installation package, after installing the package your site will look exact like our demo preview page and it will be easy for you to make changes in the content, preview all parameters and settings. The quick-start package is actually the template documentation. If by some reason you can't install it on your live server you can install on some demo server or demo folder and then preview all settings.

I bought the AS SuperFish Menu to add to a AS2048 template.
I installed it expecting that it will look like the demo, but the result is far away.

Can you please provide us with an access to your Joomla admin panel? The access info please put in the Special info area under your Purchased items section of your AS account.
I installed AS SUperfish Menu becouse AS Menu in Mobile mode is only a <Select> and the result is ugly.
Can I change that in AS Menu?

For now I have an issue with the superfish / header height. It is far too large. I cannot find anywhere to edit this.

Sorry, not quite understand why you installed AS Superfish Menu instead AS Menu, the Superfish menu is not designed for this template and it has only basic css, all used extensions and configuration you can review here:

How do I change the color of top bar that appears when scrolling down?
It depends on the template, you can easy determinate the file which should be changed and the css class by installing and usingOpera Fireblug plugin:

Have used it for years. I just cannot find anything related to background color when examining with firebug.
all I get is some lines refering to bootstrap.css and default.tmpl.css:
