I am editing the website for a german customer.
I need a structure of the positions of the modules on the sites.
I cannot rename the title of "Latest Projects". I renamed it into "Aktuelle Projekte" but it doesn't appears on the website.

The page heading you can change in your Joomla admin panel -> Menus -> Main menu -> Home menu item -> Page display options -> Page heading parameter.

By the image video I don't mean the slider. I want to publish an image video of the company in a module on the start page so that it is positioned optimal.
How can I switch "Read more" and other English buttons to German language? Setting German as default has not fixed this problem.
