I want to use the Gallery View (with isotope plugin), but apparently I cannot change the language of the titles (like: 'filter by category' or 'layout mode' or even 'All' in the category row? How to solve this in a multilanguage site or even in a site which is not in English?

The constants you can override in the appropriate template language file, for english it is: 'language/en-GB/en-GB.tpl_as002083.ini' file,
please look for 'TPL_COM_CONTENT_GALLERY ... ' constants, or you can do it using Joomla override tool, for more info please see the following article:
